Summary

RAPID MICROBIOLOGICAL METHODS ARE GIVEN, THE EMPHASIS BEING ON THE USE OF NEW TECHNOLOGY. IMPEDANCE METHODS REDUCE THE DETECTION TIME FOR YEASTS, NOTABLY IN YOGURT. THEY ARE ALSO USEFUL FOR UHT DAIRY PRODUCTS AND FOR BACTERIOLOGICAL ASSESSMENT OF MILK POWDERS. THE DIRECT METHOD (DEFT) IS VERY RAPID BUT HAS CERTAIN PRACTICAL DRAWBACKS AND IS LIMITED TO RAW MILK. SELECTIVE PREINCUBATION HAS BEEN DEVELOPED FOR USE WITH CREAM. G.R.S.
