Summary

The authors claim that the main growth in the ethnic foods market in the UK will come from Mexican foods and the fast-emerging products from the Far East, such as Thai, Indonesian, Malaysian and Japanese. Development in Indian and Chinese foods, still the most popular ethnic sectors, will concentrate on regional cuisines such as Goan and Hunanese. A report valued the market in 1994 at GBP 373 million, up 14% on 1993. The ethnic foods market has more than doubled over the last five years.
