THE AUTHOR STUDIED THE BEHAVIOUR OF FOUR BRUSSELS SPROUT CULTIVARS (VALIANT, DOREMA, LANCELOT, GOLDMINE) IN CONTROLLED ATMOSPHERE: TEMPERATURE 273 TO 274 K (0 TO 1 DEG C), 95% RH AND CO2 LEVELS OF 0 TO 17. 5%. IN A CONTROLLED ATMOSPHERE WITH 12.5% CO2, THE PRODUCTS WERE THE BEST PRESERVED, THEIR VITAMIN C CONTENTS WERE HIGHER AND LOSSES MINIMAL. THE FOUR CULTIVARS HAD THE SAME RESPONSE TO CO2 LEVELS. THEIR WEIGHT LOSS DEPENDED ON THE CULTIVAR. AN ATMOSPHERE WITH MORE THAN 12.5% CO2 CAUSED INTERNAL BROWNING AND LEAF NECROSIS.
