Summary

The paper reviews an experiment with Passe Crassane pears held in normal and modified atmospheres. Internal browning in both cases as well as causes of the browning, related to oxygen activity, are studied. The action of several antioxidative substances, such as ascorbic acid, as well as some enzymes, are studied.
