Summary

Buffered invertase solutions were frozen at different cooling rates (from 33 deg C/h to 5 deg C/min), and freeze-dried at 30 deg C and 10 Pa (0.1 millibar) for 24 hours. The invertase activity after lyophilization decreased, except when dissolved in phthalate buffer (pH 4.6) and frozen at a cooling rate of 1.5 deg C/min.
