Effect of modified atmosphere storage on the development of chilling injury in eggplants.

Summary

Eggplant is subject to chilling injury when stored at temperatures below 12 °C. One of the main goals of research on this type of injury is to find effective methods to delay the injury induced by chilling. Chilling injury was observed after 3 days storage, increased with storage time, and occurred along with accumulation of sucrose. The work discusses the evolution of enzymes that intervene in the synthesis and breakdown of sucrose. Application of storage of fruits in modified atmosphere, to decrease the incidence of chilling injury, is investigated.
