The state of art of cold storage of fruit and vegetables.

Summary

The rate of deterioration of fresh fruits and vegetables after harvest is closely related to temperature. The use of refrigerated storage to reduce deterioration is restricted by damage which may be caused to the crop by exposure to low temperatures. Storage in refrigerated conditions may result in some desiccation of the crop so the system should be adapted to reduce this effect. Refrigerated storage is expensive and free convective ventilation and the use of solar power have been evaluated in order to reduce costs. Controlled-atmosphere storage has been developed as a supplement to refrigeration to increase the marketable life of crops. The technology of controlled-atmosphere storage systems has continued to be developed, especially where it is being applied to refrigerated transport.
