Storage and quality change of eggplants under different modified atmosphere conditions.

Summary

Fresh eggplants were packaged under modified atmosphere conditions and maintained at 12 deg C. Some of them were stored unpacked as control. Samples were removed at days 0, 7, 14, 21, 26 for quality evaluations. The quality parameters studied were weight losses, dry matter, pH, total acidity, colour, texture and sensory evaluations. Gas composition analyses of the internal atmosphere were carried out on triplicate samples from each treatments after 1, 2, 5, 7, 14, 21 and 26 days of storage. Packaging with 50 micrometer low density polyethylene film allows an extension of 100% shelf life.
