Summary

The objective of the study was to determine the effects of 30% CO2 combined with different temperatures on ethanol (ETOH) accumulation in pickling cucumbers, lettuce and peaches. Commodities were exposed in separate chambers to 30% CO2 or air at 8, 18 or 28 °C for 42 h. In cucumbers ETOH accumulation was significantly increased by storage at 18 °C but 28 °C did not cause any further increase. Lettuce and peaches, stored in 30% CO2 showed the highest levels of ETOH when subjected to the highest temperature treatment.
