Summary

VERY INTENSIVE TEST STUDIES OF CRYOGENIC STORAGE IN ORDER TO SHOW THE POSSIBLE FREEZING OF FISH BY LIQUID NITROGEN. AS A RESULT, THE AUTHORS GIVE THE CHANGES IN THE VARIOUS CONCENTRATIONS OF CHEMICAL GROUPS AND INDICES, SUCH AS IODINE, PEROXIDE AND ACID INDICES, IN TERMS OF STORAGE TIME IN MONTHS, OF FREEZING AND OF THREE SUBSEQUENT STORAGE PROCESSES: IN AIR AT 255 AND 243K (-18 AND -30 DEG C) AND IN A NITROGEN ATMOSPHERE. THE RESULTS ARE COMMENTED UPON AND THE PAPER CONCLUDES BY CLAIMING THAT THE STORAGE OF FROZEN FISH IN A NITROGEN ATMOSPHERE, PREVENTING CONTACT WITH ATMOSPHERIC OXYGEN, MAY COMPLETELY REPLACE THE GLAZING PROCESS.R.R.
