Summary
Of 3 solvents compared for use with chitosan, acetic acid was best for coating fresh fruits. Chitosan coating (0.5-2% solution) significantly reduced the respiration rate of peaches and Shinko pears in storage and of kiwifruits held at 25 deg C after storage. Chitosan significantly inhibited the growth of Botrytis cinerea and fungi isolated from decaying Housui pears. Treatment resulted in a decrease in postharvest spoilage of peach, Housui pear and kiwifruit. Chitosan-coated peaches and Shinko pears were markedly firmer and less mature at the end of storage, indicating that this treatment could be an alternative means of preserving fresh fruits.
