The purpose of this study was to examine the effects of fattening methods on the carcass and meat quality of buffalo castrated at 2.5 years of age in Taiwan. The analysed items included carcass quality, raw nutrient analysis, mineral composition, amino-acid composition, and physical and sensory evaluation.
