Summary
The storage conditions under which mechanically damaged sweet potato tubers produced and accumulated ipomeamarone, a typical phytoalexin, were examined. Under high humidity conditions, no remarkable changes including darkening were observed and ipomeamarone was not detected. In contrast, under low humidity conditions, weight loss, decrease in starch value and an increase in the content of polyphenols were clearly observed.
