Summary
The concentrations of fructose, glucose, sucrose and maltose in sweet potato roots, following an 8-month storage period (in multi-walled paper bags at 13 deg C and 90% relative humidity), were assessed by HPLC. Imported cultivars and breeding lines were compared in both the raw and cooked state against New Zealand standards.
