Summary

The electrical impedance of ripe and unripe nectarine fruit was measured at harvest and after 3 and 8 weeks storage at 0 deg C, using frequencies of alternating current between 50 hertz and 0.1 megahertz. The complex impedance was separated into its resistive and reactive components for both the electrodes and the fruit flesh. Results are given.
