Summary
THE AUTHOR DESCRIBES THE PRINCIPLE OF THE DETERMINATION OF THE ENERGY OF WATER BINDING DESTRUCTION IN ICE CREAM AND OTHER PERISHABLES ON FREEZING. BASING ON THE HARDENING OF ICE CREAM, THE ENERGY OF WATER BINDING DESTRUCTION FOR VARIOUS TEMPERATURES WAS CALCULATED AND AN EMPIRICAL RELATIONSHIP IS SUGGESTED FOR THIS INDEX IN TERMS OF TEMPERATURE. RECOMMENDATIONS ARE GIVEN FOR THE PRACTICAL USE OF THE THERMAL CALCULATION RESULTS OF REFRIGERATING PLANT.
