IT IS ESTABLISHED THAT THE ENZYMIC ACTIVITY OF FROZEN UNBLANCHED PEAS DEPENDS ON THE NATURE OF ENZYMES, FREEZING AND STORAGE CONDITIONS. THE KNOWLEDGE OF ENZYMIC ACTIVITY (PEROXIDASE, ASCORBATOXIDASE, AMILASE AND CHLOROPHILASE) MAKES IT POSSIBLE TO SELECT FREEZING PROCESSES, ALLOWING FOR THEIR EFFECT ON THE PRODUCTS TO BE STORED.
