Summary

TESTS TO ESTIMATETHE EFFICIENCY OF COLD TREATMENT BY FREEZING WERE MADE. IF, AFTER COLD TREATMENT, A RESIDUE LESS THAN 0.3% IS FOUND, WHITE AND ROSE WINES ARE STABILIZED. THE RESULTS FOR RED WINES ARE NOT PRECISE. THE TREATMENT SEEMS REASONABLY EFFICIENT, BUT IT IS DIFFICULT TO EXPRESS IT IN TERMS OF SEDIMENTATION FIGURES.
