THE STIMULATION OF MALOLACTIC FERMENTATION CAN BE OBTAINED BY SEEDING WITH AN INDUSTRIAL BIOMASS OF L. OENOS. THE USE OF THIS, IN THE FROZEN STATE, REQUIRES A PREVIOUS REACTIVATION OF ALCOHOLIC FERMENTATION, THE PROCEDURE OF WHICH IS DESCRIBED. THE RESPONSIBLE YEAST AFFECTS THE MALOLACTIC FERMENTABILITY OF WINES, WHICH EXPLAINS SOME DIFFERENCES OBSERVED IN PRACTICE ; AMONGST THE COMMERCIAL DRY YEASTS, THOSE OF S.
