Summary
THE STIMULATION OF MALOLACTIC FERMENTATION CAN BE OBTAINED BY SEEDING WITH AN INDUSTRIAL BIOMASS OF L. OENOS. THE USE OF THIS, IN THE FROZEN STATE, REQUIRES A PREVIOUS REACTIVATION OF ALCOHOLIC FERMENTATION, THE PROCEDURE OF WHICH IS DESCRIBED. THE RESPONSIBLE YEAST AFFECTS THE MALOLACTIC FERMENTABILITY OF WINES, WHICH EXPLAINS SOME DIFFERENCES OBSERVED IN PRACTICE ; AMONGST THE COMMERCIAL DRY YEASTS, THOSE OF S. CEREVISIAE SEEM MORE FAVOURABLE THAN S. BAYANUS. (Bull. OIV, FR., 56, N.631-632, 1983/09-10, 694, 17130.
