Summary

THE EFFECT OF FREEZING GRAPES ON THE COMPOSITION OF MUSTS AND WINES WAS INVESTIGATED USING FIVE VARIETIES. IT WAS OBSERVED THAT WITH MOST OF THE VARIETIES THE MUSTS AND WINES FROM FROZEN 263 K (-10 DEG C) GRAPES HAD SLIGHTLY LOWER ACIDITY AND HIGHER PH AS COMPARED TO CONTROL. IN GENERAL, THE WINES MADE FROM FROZEN GRAPES HAD LOWER TANNIN CONTENT AND BETTER COLOUR.
