Ethylene and phenylalanine ammonia-lyase activity in relation to chilling injury of "Fortune" mandarin.

Summary

Low temperature storage induced pitting and staining in the flavedo of "Fortune" mandarin fruits. This physiological disorder occurred about 2 weeks after storage at 2.5 deg C, with a substantial increase in ethylene production and in phenylalanine ammonia-lyase (PAL) activity. The potential relationship between ethylene and PAL activity and the symptoms of this physiological disorder are discussed.
