THE ADVENT OF EXOTIC PRECOOKED FOODS IS QUITE RECENT. LARGE CONCERNS ARE CAUTIONS OR EVEN RELUCTANT, FOLLOWING THE COMMERCIAL FAILURE OF SOME PRODUCTS LAUNCHED IN 1982. SMALL PRODUCERS, RESTAURANTS OR CATERING FIRMS GENERALLY STARTED MANUFACTURE FIVE YEARS AGO. THERE ARE INDIAN (20 PREPARATIONS), WEST-INDIAN (6 SPECIALITIES) AND ASIAN DISHES (CANTONESE RICE, SPRING ROLLS AND NUMEROUS OTHER DISHES). CATERING IS OPENING UP FOR THESE TYPES OF PRECOOKED FOODS. THERE IS A TREND TO SUPPLYING SINGLE PORTIONS IN ALUMINIUM TRAYS. THE PRICES REMAIN HIGH AS THEY HAVE A MINOR EFFECT ON PURCHASING IMPULSES. J.L.
