Summary

The experimental research of the modified atmosphere packages (MAP) structure in mango fruit storage process by a chromatographic method is carried out. The obtained data, together with the data of other authors is used for mathematical model approbation on the basis of the chemical kinetics equations (Michaelis-Menten) for the respiration process and hypothesis about course of isobaric-isoenthalpic water evaporation process. The calculations are curried out for packing films with different permeability of atmospheric gases. The results about dynamics creation of the MAP structure, temperature, relative humidity, fruits weight loss and amount of produced condensate in MAP are presented. The received results show the good agreement of calculated and experimental values.
