Summary

Endives packed in polyethylene pouches with and without oxygen or carbon dioxide scavengers were stored at 5 or 20°C for 12 hours then tested. Oxygen scavengers halved the transient period duration without modifying the gas equilibrium composition: this effect is likely to positively affect product quality. The carbon dioxide scavengers appear to exert a limited influence.
