Summary
The effect of a high electrostatic voltage field on the freezing and thawing of fish was studied by the authors. With changing intensity of the electrostatic field, the freezing curve, the thawing curve and the quantity of microbes were evaluated. The experimental data indicate that a high electrostatic voltage field accelerates the freezing and thawing process, killing the microorganisms.
