Summary
The purpose of this research is to determine technological parameters of apple freeze-drying for improving the freeze-drying efficiency and reducing the freeze-drying cost. The influences of drying pressure, material thickness, and board temperature on power consumption and productivity were studied experimentally. The mathematical models were established to describe the parameters. In addition, the optimal combination of the parameters for the apple freeze-drying technology was obtained with the multiple-target and nonlinearity optimization. The results show that the apple drying quality can be achieved with the drying chamber pressure of 25 Pa, the material thickness of 12 mm, and the board temperature of 36.5°C.
