Summary

GOLDEN DELICIOUS, RED DELICIOUS AND AIVANIA APPLES AND CURE PEARS WERE FREEZE-DRIED AND STORED FOR ONE YEAR. THE EXPERIMENTAL RESULTS INDICATED MAJOR QUANTITATIVE CHANGES IN FLAVANONES, FLAVONOLS AND LEUCOANTHOCYANIDINS DURING FREEZING AND DRYING. THE LEVELS OF THE MENTIONED POLYPHENOLIC FRACTIONS SLIGHTLY INCREASED OR DID NOT CHANGE DURING ONE-YEAR STORAGE. THE METHODS FOR STORAGE UNDER VACUUM AND IN NITROGEN MEDIUM WERE EQUIVALENT.
