Summary

A given product, frozen more or less rapidly, aimed at freeze-drying, shows structural heterogeneities. Exposed to a vacuum, the ice-vapour sublimed moves through the product more or less rapidly according to the texture. Thus, the freezing method can influence the required time for the complete freeze-drying. A slower freezing process can lead to a more rapid freeze-drying process.
