Summary

Freeze drying is a promising technique in the field of dehydrated foodstuffs. High product quality has led to the development of freeze drying new commodities. As the freeze drying process is profitable, efforts are being made to improve the concept itself, freeze drying being carried out in a fluidized bed at atmospheric pressure and under partial vacuum.
