THE ARTICLE GIVES RESULTS OF TIME/TEMPERATURE TESTS OF < READY-TO-SERVE > VEGETABLES IN A DISPLAY CABINET AS A FUNCTION OF THE AMBIENT TEMPERATURE. A NEW METHOD OF AIR DISTRIBUTION IS STUDIED AS WELL AS THE DISTRIBUTION OF AIR TEMPERATURES AROUND THE DISPLAY CABINET AND CLOSETO THE PRODUCT. THE THERMODYNAMIC PARAMETERS OF THE REFRIGERATING PLANT WERE RECORDED AS WELL AS COMPRESSOR CAPACITY. THE RESULTS OF A SERIES OF TESTS IN A DEPARTMENT STORE ARE ANALYZED AND COMMENTED UPON.
