Summary
Bell pepper samples were preserved for 4 weeks in atmospheres containing 10, 30, 50, 70 and 210 millilitres of oxygen per litre. Controlled-atmosphere storage can extend shelf life when oxygen concentration in the atmosphere is lowered by 10 millilitres per litre.
