Summary

Cheese yield is vital in an economic sense for cheese plants, since small differences in yield translate into big differences in profit. Accurate yield estimations are difficult to obtain in cheese plants. Important factors for monitoring and controlling cheese composition and yields in plants are discussed in this chapter. The various sources of errors that impact on accuracy of yield estimates are presented, including weight or volume estimation errors, sampling, and analytical errors. Recommendations are provided on how to decrease the variations of cheese yield estimates, and cheese composition in plants, with particular reference to cheese moisture (see also this Bulletin, reference 2000-3234).
