Summary

The authors present and comment on statistical data gathered in France by the Ministry of Agriculture on the capacity of cold stores in use on January 1, 1992. They analyze changes in the different categories of cold store: public ones (service enterprises for storing and/or freezing), private ones (which handle their own merchandise) and fruit packing stations. A steady increase is noted for the first two categories (5.6 and 9.4 cubic megameters) whereas the total for fruit packing stations tends to remain at 5.5 cubic megameters (even if the number of controlled-atmosphere stores continues to increase). In each category, the following is analyzed: distribution by geographical region, by volume, capacity and mean volume, storage temperature and the numbers and capacity of freezing and quick-freezing equipment.
