Summary
The paper presents two new processes: one for using the waste from fillets production (Castel-Fish) and one for fish pulp texturising, both developed in collaboration with Ifremer (France). The first one improves pulp recovery both in quantity and quality, and the second makes it possible to produce pulps preserving the characteristics of the original fish, thus they are more authentic than surimi.
