STUDY, BY A DESCRIPTIVE SENSORY TEST, OF THE FLAVOUR OF FOUR LACTARII VARIETIES, FRESH OR SUBJECTED TO VARIOUS TREATMENTS. ALL THERMAL TREATMENTS REMOVE THE PUNGENT FLAVOUR, BUT REINFORCE BITTERNESS.
