RESULTS ARE PRESENTED OF SURVEYS TAKEN OF VARIOUS FOOD CONSUMPTION PATTERNS IN PLACES THAT SERVE MORE THAN 30 MEALS PER DAY: CANTEENS, INSTITUTIONS (EG NURSING HOMES), AND HOTELS AND RESTAURANTS. FIRST, RELATIVE CONSUMPTION OF MEAT AND FISH, AND OF DIFFERENT SIDE DISHES IS EXAMINED. A SECOND SURVEY LOOKS AT THE RELATIVE CONSUMPTION OF FRESH, FROZEN AND CANNED VEGETABLES. A THIRD EXAMINES THE SHARE THAT EACH CATEGORY OF SUPPLIER HAS OF THE MARKET FOR EACH CATEGORY OF FOOD. M. C.
