Summary
Optimal freeze-drying conditions for Bacillus subtilis, Aureobasidium pullulans and Lactobacillus brevis were investigated. Protective substances were used to compensate for the stress reported during freezing (gelatine, calf serum) and desiccation (saccharose, raffinose, trehalose, inositol) used in different combinations.
