AS SHOWN IN SEVERAL TABLES AND DIAGRAMS, IN FRANCE, THE DOMAIN OF FROZEN AND QUICK-FROZEN FOODS GENERALLY SEEMS TO HAVE STABILISED DURING THE RECENT TWO YEARS, AFTER A PERIOD OF VERY RAPID DEVELOPMENT. THE OF QUICKFROZEN FOODS (DEFINED IN FRANCE BY THE DECREE OF SEPTEMBER 9, 1964) IS IMPROVING: 447,207T IN 1980, 408,609T IN 1979, 367,812T IN 1978.. WHEREAS THAT OF FROZEN FOODS FOR DIRECT CONSUMPTION IS SLIGHTLY DECREASING, AS WELL AS THOSE FOR PROCESSING. IN 1981, THE CONSUMPTION OF QUICK-FROZEN FOODS IN HOUSEHOLDS MAY BE ABOUT 60% OF OVERALL CONSUMPTION, THAT IN INSTITUTIONS 40%. THE TRADE BALANCE SHOWS A DEFICIT, HENCE FOR FRANCE THE REQUIREMENT FOR INCREASING PRODUCTION AND EXPORTS, SO THAT THE FIRMS WILL BE COMPETITIVE IN OTHER COUNTRIES. G.G.
