AN INCREASING NUMBER OF TROPICAL COUNTRIES ARE EQUIPPING THEMSELVES WITH UNITS FOR FREEZING FISH FOR LOCAL CONSUMPTION OR EXPORT. FOR BOTH UTILIZATIONS IT IS IMPORTANT TO KNOW HOW LONG FISH CAN BE STORED. MOST SCIENTIFIC WORKS RELATING TO THIS PROBLEM DEAL WITH FISH FROM TEMPERATE WATERS. THIS PAPER SURVEYS LITERATURE ON STORAGE AT 268 TO 243 K (-5 TO -30 DEG C) AND THE POSSIBLE CHANGES IN THE PRODUCT.
