Summary

The aim of this study is to determine the suitability of sliced toast bread and the type of packaging (aluminium foil, high-density or low-density polyethylene) for frozen storage. The quality of fresh bread stored at -22 °C plus or minus 1 °C for 14 weeks was evaluated. The bread was thawed at 150 °C and proved to be very suitable for frozen storage.
