Summary

The author presents a series of data suitable for fruit in general; the relationships between the harvesting date, ripeness, moulds and organoleptic properties are discussed. Fruit are divided into 2 categories: those that should be harvested ripe and those that continue to ripen following picking. The main characteristics of these two categories are provided and lists of fruit belonging to each category are also given.
