Summary

Comparison of survival of this pathogenic bacteria in three different volumes: 1.9, 3.8 and 5.7 litres of chicken gravy during 70-77 to 7 deg C cooling and during 12 days storage at 7 deg C. The maximal growth of L. monocytogenes observed 4 to 6 days after inoculation depends on the volume of the tested gravy.
