Summary
Cottage cheese was inoculated with Listeria monocytogenes and Clostridium sporogenes. Cheese was packed in plastic materials under a CO2-enriched modified atmosphere. The growth conditions of both microorganisms are studied and compared. Temperature plays an important role. Listeria develop more easily.
