Summary

Yeasts are often responsible for spoilage of fruit juices and nectars during storage and distribution. A study was carried out in order to identify and study microorganisms implicated in the processing of the tropical fruits the most often used in the Cameroon industry. Spoilage yeasts isolated were identified as Candida pelliculosa, Candida holmii and Kloeckera apis. Their growth was more important in pineapple juice and passion-fruit nectar than in guava nectar. The best way to guarantee the marketed fruit nectar and juice quality would be an effective pasteurisation combined with a strictly aseptic packaging.
