THE COOLING AND WARMING UP CURVES FOR FRUIT IN CARTONS WITH AND WITHOUT POLY WRAPS AND IN BINS ARE GIVEN. THE AUTHOR DISCUSSES THE SIGNIFICANCE OF THESE CURVES IN RELATION TO THE COLDEST AND WARMEST FRUIT, IN PARTICULAR WHEN THE EXTERNAL TEMPERATURE CHANGES. FRUIT OUT OF STORE FOR 30 MINUTES MAY TAKE 10 HOURS TO RETURN TO ITS INITIAL TEMPERATURE. THE COST OF COOLING1 BIN FROM 303 TO 273 K (30 TO 0 DEG C) IS EQUIVALENT TO STORING 24 BINS AT A CONSTANT TEMPERATURE OF 273 K. G.R.S.
