Summary
The cold chain for bananas is briefly presented in the article. Close attention is paid to the conditions of ripeness of bananas and good taste, initial processing, transportation as well as the ripening process during which the starch is converted into sugar. The last element of the cold chain is the sale of bananas. The international scale of banana colour as a measure of its ripeness is presented.
