BETWEEN 283 AND 288 K (10 AND 15 C), THE COLOUR OF CEPHALOPODS BEGINS CHANGING AND HAVING AN EXTERNAL DETERIORATION APPEARING AFTER ONLY 5 HRS, WHEREAS AT 274-277 K (1, 3 C) THEIR STORAGE CAN BE EXTENDED WITHOUT DRAWBACKS TO ABOUT FOUR DAYS. THREE PRESERVATION METHODS CAN BE USED: 1. ICING INTERPOSING PLASTIC FILMS BETWEEN THE CEPHALOPODS, IN ORDER TO PREVENT THEIR CONTACT WITH ICE OR FRESH WATER ; 2. MAINTAINING IN A SEA WATER-ICE MIXTURE IN INSULATED TANKS, OR BETTER, USING A WATERTIGHT INSULATED HOLD FILLED WITH THIS MIXTURE, WITH A PUMP CONTINUOUSLY CIRCULATING REFRIGERATED SEA WATER ; 3. MAINTAINING IN REFRIGERATED SEA WATER, WHICH IS THE BEST STORAGE PROCEDURE, BUT THE MOST EXPENSIVE. G.G.
