A SYSTEM OF DIFFERENTIAL EQUATIONS DESCRIBING THE HEAT AND MOISTURE TRANSFER PROCESS DURING COOLING OF POTATOES AND VEGETABLES, IS PRESENTED. THE CALCULATED RESULTS ARE IN AGREEMENT WITH EXPERIMENTAL DATA. FOLLOWING THIS STUDY RECOMMENDATIONS ARE MADE TO IMPROVE THE OPERATING CONDITION OF THE AIR CIRCULATION SYSTEM.
