Summary

THE RESULTS OBTAINED ARE: 1. THE EXTENT OF THAW RIGOR WAS LARGER IN THE MUSCLE FROZEN QUICKLY THAN THAT OF FROZEN SLOWLY. 2. THE AMOUNT OF LACTATE INCREASED REMARKABLY IN THAW RIGOR. THE QUICKER THE FREEZING RATE WAS, THE LARGER THE INCREASE IN THE AMOUNT OF LACTATE WAS. 3. THE AMOUNTS OF ALPHA-GLYCEROPHOSPHATE AND GLUCOSE-6-PHOSPHATE INCREASED MARKEDLY IN THAW RIGOR IN THE MUSCLE FROZEN SLOWLY. 4. THE AMOUNTS OF NAD AND NADH DECREASED RAPIDLY IN THAW RIGOR, WHILE IN UNFROZEN CARP THEY DECREASED GRADUALLY.
