Influence of maturity degree on refrigerated coated strawberries (Fragaria ananassa).

Summary

Different formulations of starch-based coatings were developed. The effect of starch-based coating application on strawberries with different maturation degree (25, 50, 75 and 100% redness of fruit surface) stored at 0 °C was analyzed. Fruit maturation was evaluated by surface color development, anthocyanin and sugar content and titratable acidity. CO2 and 02 permeabilities of starch-based films were evaluated with an especially design gas permeability cell. Thus starch-based coatings extended significantly the storage life of refrigerated strawberries.
